Our Story Our Story Our Story Our Story
Chef plating a dish in the kitchen

It started in a kitchen too small for the both of us—Giuseppe, eight years old, standing on a stool next to his mother, learning that pasta water should taste like the sea and that pomodoro sauce should never be rushed. Forty years and one trattoria later, the stool is gone but the sauce still isn't rushed.

What opened as four tables and a hand-written menu in 1962 grew into the kind of place people call their neighborhood spot—not fancy, never trying to be, just consistent in the way that makes people come back on a Tuesday for no particular reason. Three generations of the same family have stood in that kitchen since, and the recipes have barely changed.

Fun Facts

Cacio e pepe has exactly three ingredients—and somehow every Roman nonna makes it differently. Giuseppe insists his is the correct version. So does everyone else's grandmother.

Carciofi alla Romana are only on the menu for about six weeks a year. We've had guests move their whole trip to Rome around that window.

What We Do

Our Philosophy

We believe a menu doesn't need forty dishes to be good—it needs twelve dishes made properly, every single time. No shortcuts, no trends, no deconstructed anything. Just the food Giuseppe's family has always made, cooked the way it's supposed to be.
